Olde Gutrot's Awesomely Appetizing Apple Wine

Fill a sterilised 5 gallon fermentation bin with cored, quartered apples, with any bruising removed. A mixture of cookers and eaters is best.

Fill with boiling water and seal with the lid. Leave for a few days, stirring twice daily.

Strain into another sterilised 5 gallon fermentation bin.

Add 8kg sugar, 1kg chopped raisins, the juice of 9 lemons and a cup of black tea.

Top up with part hot, part cold water and stir until the sugar is fully dissolved.

Add wine yeast, 2 teaspoons of yeast nutrient and a teaspoon of pectolase. Stir, seal with the lid fitted with a sterilised airlock. Store in a cool, frost-free place for a fortnight, stirring twice daily.

Siphon into a sterilised 5 gallon demijohn using a sterilised plastic tube. Top up with water. Cap with the lid fitted with a sterilised airlock.

Store the wine for at least 3 months or until clear.

Siphon into sterilised wine bottles. Avoid disturbing the sediment or transferring it into the bottles.

Can be drunk immediately, but is considerably more flavoursome and less sweet if left until its third year.
