Olde Gutrot's Bounteously Blooming Bramble Wine

Blitz 3lb washed blackberries and place in a sterilised fermenting bin.

Pour over 1 gallon of boiling water and stir thoroughly.

Add 3lb of sugar and stir until thoroughly dissolved.

Let cool, then stir in 1tsp each of pectolase and yeast nutrient, and a sachet of yeast.

Seal the fermenting bin with a lid with an airlock and leave until fermentation has finished (about 5 days).

Strain into a sterilised gallon demijohn. Top up with cooled boiled water. Cap with the lid fitted with a sterilised airlock.

Store the wine for at least 3 months or until clear.

Siphon into sterilised wine bottles. Avoid disturbing the sediment or transferring it into the bottles.

Leave to mature for 6 months.
